Memorial Day Grilling Secrets!

Whether you are a grilling expert or you just like to sit back and watch…planning a fun-filled barbeque is a cinch! And the owners of Sweet Racks Barbeque are spilling the beans on how to cook up a mouthwatering Memorial Day Barbeque!

Ben and Naisy Cherek bring Chicago flair with a touch of Pilipino flavor to Panama City Beach. With some key ingredients and just a few simple steps, Naisy and Ben will have you ready to rock n’ roll in no time!

“First of all, most people think you have to have a fancy, expensive grill,” said Naisy. “We are using this simple, round, $40 coal grill.”

If you plan on using a charcoal grill, Ben says the one thing most people tend to look over before getting the coals burning…is the instructions printed on the charcoal bag!

“For 20 years, it’s been posted on the back of a Kingsford BBQ bag, and it’s amazing how fast they cook, just by using the water and the heat process. It’s almost like a built-in steamy convection oven.”

Ben says if you follow these simple steps, you will have ribs that are steamed to perfection! “Get the charcoals really hot, (ash grey is the color you are looking for), lay some ribs on the grill to sear, then I’m going to take the ribs off, cut them in half and set them aside for a minute. Next, I’m going to remove the top half of the grill (use caution grill is very hot!!!), separate the charcoals from the middle, place a metal bowl in the middle of the charcoal, fill the metal bowl up with water, put the top of the grill back on, then place your ribs back on the grill to sear (you want to place the ribs in the middle of the grill, directly above the bowl of water).” explained Ben.

Of course no barbeque is complete without potato salad, and Naisy’s favorite: Cucumber Salad.

“We do something non-traditional…sometimes it’s so hot you don’t want a mayonnaise-based kind of salad, so what we made is a cucumber salad,” said Naisy. “All you have to do is chop cucumber, add some chopped red onions and lastly, add the special sauce 1 cup sauce: white sugar, white vinegar and just layer it with black pepper and throw some salt in it. You then drizzle the sauce, (1 cup), all over the cucumber salad, mix it up, and it’s that simple!”

Another staple is baked beans. “Just use traditional baked beans! I can’t tell you all of our secret ingredients, but I can tell you this…it’s a plain ol’ can of baked beans. You can put some brown sugar, green peppers and whatever else you want to doctor it up with. It’s so easy to make!”

The key thing is being creative at a barbeque, having fun with your friends, and that’s what we like to do at the restaurant everyday.”
