Healthy Side Dishes with Dan and Jackie

The holiday season is here and with it all kinds of delicious baked goods and high fat foods that can easily derail anyone trying to watch their waistline.

But there are ways to avoid falling off the healthy-eating bandwagon. You might recongnize Dan and Jackie Evans, the mother/son team from NBC’s hit reality show “The Biggest Loser.”

Together they lost 225, but keeping it off isn’t easy. It involves making conscience choices each and every day like choosing to prepare a traditional holiday favorite in a new way that’s still delicious but more nutritious.

Lemon and Garlic Green Beans
2 pounds, ends trimmed
1 tablespoon extra virgin olive oil
3 tablespoons brown mustard (instead of butter)
2 large garlic cloves, minced
1 teaspoon fresh herbs
2 tablespoon lemon juice
1 tablespoon lemon zest
Salt and freshly ground black pepper
Fresh grated Parmesan cheese

Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
Heat a large heavy skillet over medium heat. Add the oil and the brown mustard. Add the garlic, fresh herbs and lemon juice and sauté until fragrant, about 30 seconds. Add the beans and continue to sauté until coated in the brown mustard and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

Dan's Mashed Potatoes
2 1/2 lbs red potatoes, unpeeled, quartered
3 cloves garlic, peeled
1/4 cup of non-fat Greek yogurt (instead of butter)
1/2 cup skim milk
1 teaspoon salt
1/4 cup grated Parmesan cheese

Put potatoes and garlic in large pan. Cover with water. Bring to a boil. Reduce heat and simmer for 25 minutes, until potatoes are tender. Drain well. Mash with the yogurt, milk, and salt. Stir in the parmesan cheese.

Another key component to keeping the weight off during the holidays is exercise.
