Louisiana Red Beans and Rice with the Buxton Brothers

The Mardi Gras celebration at Pier Park kicks off Friday and we are getting in the spirit with a classic Louisiana dish made by two brothers who live here but grew up there in Louisiana.

Justin and Jordan Buxton both run local food establishments, Justin runs Finn’s Island Style Grub, while Jordan runs Bayou on the Beach.

Friday, they taught us the secret to their red beans and rice.

Fat Tuesday is the 12th and Bayou on the Beach is hosting a Crawfish Boil to celebrate.

Here is the recipe:

1 lb soaked kidney beans
1 lb sausage (smoked, andouille or both)
1 qt stock (ham, chicken or vegetable)
1 onion, diced
1 bell pepper, diced
1 stalk of celery, diced
2 cloves gralic, minced
2 Bay leaves, dry
1 TB Bayou Seasoning

Let it cook for about two hours.
