Lobster of the Angels Recipe From Boatyard

Angel hair pasta tossed with Maine lobster, garlic, olive oil, white wine, assorted peppers and herbs.

2 cups olive oil
2 oz garlic puree
1/2 bunch of chopped parsley
1/2 bunch of chopped basil
1/2 bunch of chopped scallions
1/2 cups clam or chicken broth
2 oz lobster base

Angel Hair Pasta

Heat broth and lobster base and set aside.

Heat olive oil to a smoking point and add garlic. (It will foam)
Add all chopped herbs to extract flavors and add broth. This will be your basic sauce for the dish.

Steam lobster for 6 minutes, chill in ice bath and break out of the shell.

Cook angel hair pasta to Al Dente.

In saute pan, heat assorted peppers in 6oz of the sauced lobster and pasta, toss quickly and serve decorated, sprinkle with Parmesan and Romano cheese.
