Billy's Veggie Soup and Meatballs
Ingredients Needed:
1 med size rutabaga, peeled and diced to potato size chunks,4-5 turnip roots peeled and chunked,6-8 carrots peeled and sliced, 2 stalks celery sliced, 3-4 baking potatoes peeled and diced to chunks, 2-14 oz cans Mexican style tomatoes,1 can rotel tomatoes w/chili peppers mild,14 oz can whole kernel.



Corn drained,14 oz. can purple hull peas drained,14 oz. can English or green peas drained, and 2 46 oz cans of V-8 juice. Also a pkg. of Rosina Italian style frozen meatballs, need about 36 meatballs for this pot of soup,1- med size cabbage cut and sliced in strips, and use 2 pounds of ground chuck cooked, crumbled and drained, and 2 pkgs Beefy Onion mix.
Directions:
Use a 14 quart pot with lid to cook this as it adds up to quite a pot full! First cook and drain ground chuck, put in pot, add carrots, rutabagas, turnip roots, potatoes and pour in enough V-8 juice to cover them and bring to slow boil till almost tender, then add beefy onion.



Mix and all other veggies except cabbage, cover with more V-8 juice and let simmer till all is almost done and add cabbage and meatballs and more.



V-8 juice and simmer till all done! VERY goood stuff!! Enjoy!!
