| Leek Stuffed Breast of Chicken |
Ingredients Needed:

| Directions: Chicken: Cut leek long way and lay flat on board and cut into half moons. Sauté leeks in butter until soft. Use a low heat and try not to brown. Set aside and let cool. Place chicken on cutting board and cover with plastic wrap. Using a meat cleaver, tenderize chicken by pounding until all sides are even and flat. Season chicken with salt & pepper. Place leeks into center and roll. Place on the end of a piece of plastic wrap and roll. Twist off ends and place in boiling water for 10 minutes. Remove chicken from plastic wrap by cutting of one end. Slice into rounds and arrange on plate. |
